Part Two: Pancakes

Alton Brown's recipe for pancake mix and instant pancakes creates, perhaps, the most delicious pancakes I have ever made. Why mess with perfection? Alton Brown's Pancakes.

    Best Pancakes Ever

    1 1/2 cup flour
    3 tablespoon sugar
    2 teaspoon. baking powder
    1/2 cup mascarpone at room temperature
    3/4 cup 1 tablespoon whole milk
    2 large eggs, slightly beaten
    1 teaspoon vanilla
    1 teaspoon lemon zest

    Sift dry ingredients together. In another bowl, mix mascarpone, milk, eggs, vanilla, and lemon zest until well combined. Pour into dry ingredients and mix only until moist. Pour mixture onto well-heated griddle and cook until golden on each side.

  2. Ooooooh those *do* sound delightful! I love the mascarpone. I'll be giving these a try next time I have a hankering for some pancakes!
